While there's no evidence that the Original Floridians were barbecue lovers, we pride ourselves in our collected and perfected recipes. From the selection and preparation of meats, to the distillation of sauces, the recipes we use at Scruby's are quite special and our repeat customers prove that we're on to something delicious in Pembroke Pines. Authentic original Open Pit Barbecue has evolved into a modern brick oven with an open fire underneath providing the convection heating, and hardwoods that feed the fire providing the succulent smoked flavors. The advantage of this method of slowly cooking meats is that the connective tissue in the meats break down, producing superbly tender-cooked beef and pork; and hardwood red oak smoking provides the best smoked tastes. We found that dry rubbing our meats with seasonings, provides more flavors, and complex and interesting fragrances. Our Head BBQ Chef's been our Pit Master since we first opened in 1995.
