In 2007, after producing two successful vintages of Pinot Noir, Pali outgrew its small, "garagista" style production facility in .  They built a new, larger, state of the art winery.  The new Pali winery was Lompoc's first building erected for the purpose of wine making. Over the past ten years, production has grown from 1500 cases to over 20,000 cases a year.  However, our goal remains the same: to make terroir-driven wines and to bring these wines to the consumer at the best prices without compromising quality. From the vineyard to your glass, the Pali Team takes pride in making wines that express the unique qualities and flavors of the varietal and the appellation in which it's grown.  Our Winemaking Head Winemaker Aaron Walker and Consulting Winemaker Kenneth Juhasz craft all wines under the Pali Wine Co. and Tower15 labels. Aaron Walker joined Pali Wine Co. in 2007 and began overseeing wine production in 2008. Prior to his time with Pali, Aaron Walker was mentored by a variety of top winemakers in the California Central Coast. Influenced both by his mentors and his days in the food business, Walker has developed a winemaking philosophy that has helped form the Pali Wine Co. style.  “I feel that there is no single ‘right way’ to make wine,” says Walker. “It’s a lot like cooking. I want my steak to taste like a steak – not just marinade or seasoning. I want my wines to taste true to their character and source – not just covered up with too much oak or improper blending. Everything needs to be in balance. We start with the best products and treat them with respect, letting their natural beauty shine through.” Kenneth Juhasz is Pali Wine Co.’s Consulting Winemaker and has been an integral part of the  Pali winemaking team since 2008. Much of Juhasz’s vast winemaking knowledge has been developed through hands-on experience garnered from his work in vineyards throughout the world. Juhasz’s winemaking philosophy is to “develop my own idea of what is possible in each vineyard, and then to accentuate those characteristics in the wine. I strive to create wines with finesse, acid, perfume, and elegance, yet balance them with a masculine wine structure. I do this intuitively in every wine I make.” He began his introduction to wine at the age of 15 working in the restaurant business. Juhasz’s interest in oenology continued to grow and lead him to manage a wine retail shop by the end of college. He then moved out west to work under Ken Barnard of Acien Wines. Juhasz currently consults for Pali Wine Co. and on other select Pinot Noir projects in Oregon and California. He also has his own label, Auteur. There is no more important part of the winemaking process than the quality of the fruit. Pali sources grapes from top notch vineyards whose owners and managers meticulously tend their vines and grow the highest quality fruit. During harvest, our winemaker consults with the vineyard managers on the optimal time to pick. The fruit is then harvested by hand.   Join us on April 4, in our San Diego Tasting Room as we taste through 10 storied wines from Pali’s past including a Pinot from Pali’s inaugural 2005 vintage. Tim Perr will lead the tasting of these diverse and critically acclaimed wines that helped define Pali. Price is $40 (or $30 for our wine club members) and seating is limited.
