Capt Edward James Edmond was born and raised in a fishing village called Oyster Bay, Long Island. He began fishing with his father and Grandfather over 40 years ago. In his early 20’s he started commercial fishing on his own boat and on the world famous pine island oyster boats. In 1992 he moved to Anna Maria FL where he was partial owner/operator of Off Shore Marine towing and rescue company. He Became a US Coast Guard licensed Captain in 1999 and ran his own fishing charter business. That same year he also started Edmond doors and Hardware, Inc.
While taking a break from commercial fishing, he concentrated on his commercial door business which he still runs today. In 2011 Captain Ed married his first mate, the love of his life, and high school sweetheart, Stephanie Cole. With her encouragement and support, his love and respect for the sea was awoken. Intrigued by the mullet fishery for over 20 years, Captain Ed returned to his true passion and started commercial fishing again. this inspired him to research what was the driving force behind this enormous fishery.
Brought to you by – Gulf Coast Caviar.
You are the backbone of this industry and we would not have the word “seafood” on our menus without your relentless hard work and bravery. From the team at Gulf Coast Caviar, we honor, respect, and support your tremendous efforts.
Our bottarga is sourced by local fisherman, which we maintain a personal relationship with. We fish side by side with a fleet of local boats that catch and sell their fish the same day that they are caught. From there, they are roed by hand at a HACCP certified facility. The Roe is then hand selected while the fish are processed separately.
WILD CAUGHT GULF COAST CAVIAR
We are always working hard to bring the worlds freshest
It has been documented back in the 1500’s by conquistadors that had discovered native Americans salting and sun curing mullet roe. It has also been known that Phoenicians back 3000 years ago were salting and drying mullet roe. The Florida gulf coast striped mullet roe is known world wide for its unique taste and texture. With every taste we can appreciate and respect the full range of rich flavor perfected through out history. Always sustainably wild caught, here at Gulf Coast Caviar, we strive to bring you the world’s best bottarga.
