Hello! Hoi! My name is Jessica Knobel, I am a Registered Dietitian Nutritionist (RDN) currently licensed in the sunny state of Florida.  I was originally born in Zurich,  Switzerland and moved to the states at a very young age. You will find that many of my recipes are influenced by the swiss culture. I earned my bachelor's degree in Nutrition and Dietetics from the University of North Florida and am currently working on my master's degree from The Sage Colleges.  While expanding my education, I work full-time in the clinical setting. The clinical field has given me endless opportunities to be exposed to a variety of diseases and conditions.  While I enjoy working in the hospital, my passion for nutrition goes far beyond what I am capable of doing in the inpatient setting. I genuinely enjoy getting to know my patients and helping them overcome obstacles and challenges holding them back from reaching their health goals. Golden Sun Nutrition is really a name that symbolizes my life and journey thus far. Ever since I can remember, I had an obsession with being in the kitchen and exploring different foods and recipes. My passion for food and cooking comes from my incredible mother. Every dish we would make together felt like an art class, which is what cooking feels like to me; pure, delicious, nourishing art. Once in college, I always felt this pull to be in the medical field. Needless to say, I thought I was destined to be a doctor or a nurse because at that time, I had no idea that being a Dietitian was even a career. It wasn't until my sophomore year when I lived with one of my best friends, Chelsea, that I realized what my calling really was. She opened my eyes to so many interesting new foods and their health benefits. Long story short, living with Chelsea was a pivotal moment in my life because it opened my world to nutrition and dietetics. Before the deadline, I changed my major from Biomedical Science to Nutrition and Dietetics. If there is one thing I am certain about, it is that I made the right decision that day. As a Registered Dietitian Nutritionist, my passion is to help others discover how to feel the best they have ever felt and live a long and healthy life. My number one belief is to use food as medicine: to prevent and manage current diseases and conditions. Using a non-diet appro ach, I help clients reach all of their personal goals with nutrition, teaching them how simple and achievable living a healthy lifestyle can be.  -RD/RDN: Registered Dietitian Nutritionist, Commission on Dietetic Registration (CDR)  My Food Philosophy  02. MORE FRUITS & VEGGIES. This is something that we all already know, however don't always put into action. The health benefits of consuming more fruits and vegetables is endless. Instead of making a meal centered on meat or other protein sources, make a meal centered on vegetables.  03. MINDFULNESS. The ability to enjoy all of the foods we love by carefully listening to our bodies hunger and satiety cues. Being mindful allows us to eat until we are satisfied rather than uncomfortable.
