Mayra and Tony Rosales retired from a very successful metal fabrication business in Miami, FL. Looking for a more peaceful life in the country, they discovered their passion in building a sustainable farm that produces fresh farm produce for their family and friends. With a background in engineering, Tony began to design his own aquaponics system that would begin to produce a complex array of vegetables and organic farm raised fish. They found their niche in producing microgreens and leafy vegetables using this state of the art aquaponics system which is both viable and sustainable. By staying clear of hormones and genetic modification of their crops, this family run business has grown their passion into a flourishing business that they want to share with their neighbors. These tiny vegetable greens are used to compliment both the visiual and flavor aspect or as an ingredient primarily in fine dining restaurants. Their delicate textures and distinctive flavors are used by fine dining chefs to add a distinctive touch to a dining experience. Smaller than “baby greens,” and harvested later than “sprouts,” microgreens can provide a variety of leaf flavors, such as sweet and spicy. They are also known for their various colors and textures. Among upscale markets, they are now considered a specialty genre of greens that are good for garnishing salads, soups, plates, and sandwiches.[1] ,The microgreens range in size from 1” to 3” including the stem and leaves. A microgreen has a single central stem which has been cut just above the soil line during harvesting. Organic Farm raised tilapia are fed the highest quality feed and are maintained in quality controlled water conditions at all times. They form an integral part of the aquaponics mechanism used at our farm to create a completely organic product you can trust.
