Hiring Luke Bjoin as managing director significantly moved 1000 NORTH forward in its quest to become Palm Beach County’s leading fine dining destination. Luke spent most of his career working with Robert De Niro, and Nobu Matsuhisa, the celebrated chef/proprietor of the Nobu group of restaurants. Matsuhisa gained fame with his unique brand of fusion cuisine, blending traditional Japanese ingredients with influences from Peru. Luke helped take the chef’s culinary vision from the kitchen to the dining room. Despite his experience in upscale dining, Luke started from the bottom. He began his career as a busboy in a Chinese restaurant in his hometown of San Diego, and learned every aspect of the business as he worked his way up the ladder. Along the way, he realized the importance of making the experience unforgettable for every single guest. His motto is simple: “Great food plus unparalleled service equals happy guests.” When he’s not innovating ways to provide the best service, Luke spends his free time golfing or creating new dishes to cook at home with his wife Angel. His extensive experience makes him uniquely qualified to lead the kitchen at 1000 NORTH, the most eagerly awaited restaurant and private club to come to Palm Beach County in decades. Morris puts a soulful spin on modern American cuisine, with a focus on the coastal influences of Florida, Louisiana, the Carolinas, and New England, relying on his seasonal and flavor-driven style. When not manning the stoves at 1000 NORTH, Morris can be found cooking at home for his wife Page, 2-year-old daughter McKesson, and Luke, the family’s Boykin spaniel. Before joining the team at 1000 NORTH, Stephane worked as an executive chef for Creative Edge Parties overseeing catered events in both Miami and New York. He has served as a sous chef, executive chef, and a consultant, designing menus and training teams. Under his leadership, Stephane’s restaurants and resorts have garnered numerous accolades, including being recognized as “best in the world” by Stephane is driven by his passion for healthy eating and living.
